Puffed cakes family expands

Micro pellets have been introduced into the puffed cakes family from Limagrain Céréales Ingrédients (LCI), which now includes multi-cereal, maize and potato pellets.
“These light chips have a major advantage over all their rivals,” explains Patricia Panel-Dusséaux, marketing manager. “They are expanded at high temperature in a mould and, hence, contain no cooking fats but remain just as crunchy and melt-in-the-mouth.”
“Limagrain Céréales Ingrédients has developed its micro range cereal-based pellets to bring new texture, new taste and new colour to puffed cakes. Also, the same technology and same process – but using different raw materials – allows manufacturers to develop new market segments. Therefore, these pellets allow many possibilities of differentiation – alone or mixed with other raw materials – for the biscuit, rusk, dietetic, organic and catering markets.
“Puffed Cakes are really taking off – with their multi-cereal formulas, mixes, different shapes and textures, pleasure and health can go hand-in-hand,” she adds.
