Award-winning chocolatier introduces North South Confections

A new confectionery line has been launched by award-winning chocolatier Justine Pringle. New York-based North South Confections pairs creamy fruit and caramel centres with carefully chosen chocolate infusions.

Justine Pringle is the Danish-South African chocolatier behind NYC’s Nunu Chocolates (named one of the “Best in America” by Bon Appétit and “Top Ten Chocolates” by New York Magazine). Pringle grew up between the cities of Copenhagen, Johannesburg, and Geneva, and in all of these places, she ate chocolate every single day. She reportedly likes her chocolate creamy, dense, and cozy – which she admits is reflective of her Danish heritage. This impulse, along with her obsession with how the properties of sugar are manipulated by time and heat, inspired her to create the flavour combinations of North South Confections.

“Throughout the time of Covid—when so many of us are craving comfort through food—I found myself craving specific and unexpected flavour combinations that sent me on a quest to feel fully satiated. This impulse ultimately influenced the curious flavour profiles of North South. My aim was to create an unapologetic escape for this heavy time,” commented Pringle.

North South Confections’ first collection, Fruits Both Familiar and Curious, features creamy, chocolate-infused 100% fresh fruit purée centres enveloped in 70% cacao dark chocolate. The flavours are:

  • Tawdry Tart: Fresh passion fruit purée, caramelised and infused with white chocolate for ideal creaminess and enrobed in dark chocolate.
  • Well, Hello, Coco: Pure coconut purée turned to caramel, blended with white chocolate and surrounded in dark chocolate.
  • The Real Colombian Gold: A milk chocolate-infused, dark chocolate-enrobed, caramelised purée of naranjilla— a bright, smooth, citrusy fruit from Colombia.
  • My Dear Graviola: Graviola purée infused with white chocolate, caramelised, and wrapped up in dark chocolate.
  • Licentious Lime: Fresh, pure lime purée infused with white chocolate, turned to caramel and enrobed in dark chocolate.
  • Forget the Cake: Caramelised, chocolate-infused strawberry purée enveloped in dark chocolate.

The chocolate used in each North South confection is from Republica Del Cacao, featuring cacao that comes from small plantations in Peru, Ecuador, Colombia, and the Dominican Republic. North South’s suppliers are committed to a code of Responsible and Sustainable Practices that secure safe labour conditions, human rights, anti-corruption and environmentally friendly practices.
